Bistro Toulouse was founded back in 1989 as Café Toulouse. After sixteen years and several owners, the restaurant found its way into the hands of Chef Michael Scott Castell (photo). Instantly seeing its potential, the restaurant was acquired and closed for a quick remodel and a menu overhaul. Bistro Toulouse was re-opened in July of 2006.

Chef Michael Scott Castell has been involved in the restaurant business since the age of 14, when he got his first job peeling shrimp and washing dishes in Louisiana. A graduate of the Art Institute of Houston, he has worked throughout the Northern Midwest, Louisiana and Texas.
